Spinach

Baby spinach is a boneless piece of meat from the lower, outer, and transverse portion of the rear quarter of the meat.

It is the stretched muscle that is cut from the entire quadrilateral. When its size is reduced, it is more tender and is highly appreciated for the oven and the grill. It is a very traditional Argentine cut, easy to roast and with a great flavor. It is usually eaten accompanied by vegetables.
